I'm really sorry that I did not make it over to your display at the Mid Review. From looking at your board and the comments you got, I am a bit unclear about your product idea. It may be that the board you posted is hard to read, but I really can't tell right now exactly what your product is. Your arguments for why you have selected this audience, and how you imagine influencing their eating habits by planting healthy alternatives in the very place where this population of at-risk eaters are going to buy food. Can you please post some more information that clarifies your project in its current state for someone who is not very familiar with your ideas? Then I will be able to respond more thoughtfully about your user testing could help you to refine your thinking as you pull into the final stretch.
